As a mother of two young boys, I am a HUGE fan of crock pot meals. They are easy and take very little effort; toss in the ingredients and go. Being a mom means you are always on the go, fancy breakfasts with timely preparation is best saved for special occasions, fast and easy is more logical for our family. I make a ton of dinner crock pot meals and I have recently started dabbling in breakfast dishes. Are you tired of boring oats in the morning? We were too. My tasty over-night crock pot oats will leave your stomach feeling thankful.

These Apple Pie Oats are so delicious your family will be begging you to make them again and again. Our toddler is on a apple kick right now, so anything that involves apples are a huge hit. We prefer granny smith apples here, but this recipe could be made with whichever apple your family prefers. I put this easy breakfast together in just a couple minutes after our the children are in bed.

What you will need:

2 or 3 apples peeled and cubed ( I used three smaller granny smith apples for this recipe)

1 cup of steel cut oats

1 tsp of Apple Pie Spice (you could also substitute 1/2 tsp of cinnamon, and 1/4 tsp. of nutmeg)

2 tbsp. of brown sugar

2 cups of milk (I use almond milk- but I tell hubby I am using whole milk {he hates almond milk so he says})

1 cup of water

First make sure to spray your crock pot with a non-stick cooking spray- this is very important, you don’t want this delicious breakfast to wind up caked to the sides. Next, I prep the apples- wash, peel, and chop. Once the apples are peeled and chopped, add them to the crock pot. (Try to keep the apples in similar size pieces so they cook evenly) Next add the oats, spices, water and milk to the crock pot and stir. Cover and cook on low for 7 hours. When you wake in the morning you will smell this delicious breakfast calling you from your bed. I must say, there is NO better way to wake up. All that is left for you to do is too plate and serve. (for extra flavor you can add a few raisins on top and a drizzle of honey)

Fun Fact: Why are steel cut oats a great breakfast choice? They are whole oats, they take longer to cook making them the perfect crock pot food. The longer cooking time goes hand in hand with the amount of time it takes to digest them. The longer a food takes to digest the longer you will feel full. Steel cut oats are high in fiber and are a complex carbohydrate- this helps reduce cholesterol and blood pressure. So pour yourself a hefty bowl of these delicious Apple Pie Oats with no need to feel guilty.
