An Easy Egg and Avocado Recipe
Breakfast is by far my favorite meal of the day. I wake up, enjoy my coffee, work out, do a little reading and then enjoy breakfast with my kids once they wake up. It’s one of the main components of my morning routine. Routine is key in my life, and breakfast is part of how I kick start my day. I could easily eat an egg every morning. People who do not like eggs confuse me. I don’t think we can be friends. Kidding! So when it comes to eating eggs I have pretty much tried them every way you could imagine. And today’s breakfast is an all time favorite. It’s easy and combines two of my favorite things: eggs and avocado. They take about 15 minutes to bake so I like to put them in the oven before I go and get the kids out of bed. Are you ready to amaze you taste buds early in the am. This egg treat will not disappoint.
What you will need:
A Ripe Avocado
Foil & a baking sheet
Directions: Preheat your oven to 375. Next slice the avocado in half and remove the pit. Line your baking sheet with foil and place the avocados on top (cut side facing up). Crack an egg into each avocado and sprinkle with pepper. Bake for 12-15 minutes until your egg is cooked to your preference.
That’s it! How simple is that. This is a tasty and easy egg breakfast everyone will enjoy. I like to brown a piece of wheat toast to dip into my yolk. (That is one thing I will not give up, I love a dippy yolk) Before dipping the toast I like to spread a little of the cooked avocado on top in replace of butter.
