Are you looking for an easy way to incorporate kale into your diet? The answer is in this fresh and delicious tasting kale pesto. This is a meal that even the biggest of critics will enjoy. I live with some very picky boys, oddly enough my fiancé is worse than our toddler. Getting them to eat healthy isn’t always an easy task. However, once I served them this quick and easy dinner I knew I had a winner on my hands.
One of the best things about this recipe is the ingredient list is small. I try to avoid recipes that call for a ton of ingredients, as a mom that can raise the grocery bill and can be more time consuming than my children will allow me to spend in the kitchen.

What you will need:
Whole wheat pasta (linguine noodles work great, I usually do a penne though- it is easier for my 9 month d to grasp)
About two cups of raw kale (it will become about a cup once steamed)
3/4 cup of extra virgin olive oilpesto
1 cup of freshly grated Parmesan
A tablespoon of lemon juice
4 cloves of garlic (you will blanch them- so the taste will not be too bitter or overwhelming)
Salt and pepper to taste.

First,  blanch your peeled garlic cloves for about 2-3 minutes. While you are blanching, steam the two cups of kale. Once the kale is steamed add it to a food processor with the garlic. Slowly pour in the extra virgin olive oil. Once the olive oil is well mixed add in the parmesan cheese, lemon juice and desired salt and pepper. That’s it! Simple and delicious. Pour over the al dente cooked whole wheat pasta, sprinkle a little more fresh parmesan on top and dinner is ready to be served. Prepare yourself for smiles and awakened taste buds. The best part you are pumping your body full of vitamins.
