Burgers, the taste of sweet summertime. Not always the top choice on the healthy charts. Even the leanest ground beef is packed with fat. (that is what makes it so darn tasty) Turkey burgers can be dry and a tad bit boring if you eat them all of the time. So what do I turn to when I still want a burger but something a little different. Kale burgers! Don’t give me that. I feel as if I can feel your eyes rolling at me through the screen. I am telling you, don’t knock it before you try it. If I can get my little rascals to not only eat them but enjoy them I am sure that you will to.
So why eat a kale burger? Well in short it is a super green. If you put all of the leafy greens in a battle, kale would come out on top. It is one of the most nutrient dense foods on the planet. Yes PLANET! It is jam packed with antioxidants, and an excellent source of vitamin C and vitamin K. Did you know kale has almost 5 times the amount of vitamin C as spinach. Sorry Popeye. These are just a few benefits, so if you are going to have a veggie burger choose a kale burger. So what are you waiting for, let’s get to cooking.
What you will need:
3 bunches of Kale
1.5 cups of cooked broccoli
1 bag of raw spinach
3 cloves of garlic
Start by steaming the kale and spinach and broccoli. Saute the garlic in a pan. Once all of the ingredients have been cooked down, drain in a colander and blot with a paper towel to remove excess moisture. Next place all ingredients into a blender and blend until mushy. (that is a funny word and doesn’t sound appetizing but have no fear you are not done yet) Next preheat olive oil in a skillet or flat top grill to medium heat. While the pan is heating form your patties. Cook until crisp on both sides, about 4/5 minutes each side. Add to a bun and top with your burger favorites. We just used a little cheese today because my boys aren’t big on extra veggies and I wasn’t worried since these veggie burgers are packed with so many nutrients. Now sit back and enjoy your tasty burger.
