My crock pot is my best friend. I love being able to throw in the ingredients and leave it. It’s perfect for when I need to run errands, or want to spend the day at the park with the boys. And honestly I think they taste better than most things I try to bake in the oven. Me and the oven are not friends. I cannot bake desserts and my meats always turn out dry. So I give you a delicious roast that can be made in the crock pot- and it is another paleo friendly recipe.Paleo Roast – What you will need:
1.5/2lb roast (thawed)
1 tsp sea salt
1 tbsp black pepper
2 tbsp ground coffee
2 tbsp Cocoa powder
2 tbsp paprika
2 tbsp cayenne pepper
1 tsp chili powder
1 tsp ground ginger
1 cup brewed coffee
1 cup beef broth
1/4 cup balsamic vinegar
1/4 cup chopped onionDirections: Add chopped onion to the crockpot. Combine all liquid ingredients into the crock pot and pour over the onion. Mix all of the dry ingredients in a small bowl and pat onto each side of the roast. Gently add the roast to the crock pot. Cook on low for 7 hours.

Now just sit and wait, or better yet go out and enjoy your day. When you return home your kitchen will smell amazing, making your mouth water. Cook up a side of your favorite vegetables to go along with the roast- I usually make sweet potatoes and green beans. Cut and serve, you will not need a sharp knife- this roast is extremely moist and delicious. If you have any leftovers, save the meat to make Shepard’s Pie the following night. Substitute mashed cauliflower for mashed potatoes for a healthier alternative.
