Are you among the many skipping breakfast each morning? I am here to help you change that. Skipping breakfast is like starting off your day with a car that is about to run out of gas, pushing your foot to the pedal hoping to make if to a gas station before it is too late. When you skip breakfast your energy is low, having a small meal gives your body a boost of energy without packing in a bunch of extra calories from energy enhancers such as; coffee and energy drinks. If you are thinking to yourself, “I don’t have time” and “I don’t want to wake up earlier than I already do”. There is no need to stress over breakfast, breakfast can be easy. You can have a delicious, nutrient packed meal that doesn’t come in a prepackaged bar full of calories. If you want to kick start your day while indulging your taste buds, then these cheddar and spinach miniature quiche are perfect for you.


I make these miniature quiche on Sunday and they last me throughout the week. I individually wrap them and reheat them in the morning. They take just a few ingredients, and taste amazing.


What you need:

A muffin tray

8 eggs (You can substitute egg whites)

1/4 cup of milk

1/2 cup of chopped spinach

1/3 cup of cheddar cheeseegg


First preheat your oven to 375 and spray your muffin pan with cooking spray. In a bowl mix the eggs and milk. Add some chopped spinach to each muffin tin. Follow with the egg/ milk mixture. Finally, top each of them with a little cheese. It is that simple! Put the muffin tray in the oven for 12-15 minutes until the eggs are cooked through. Take them out of the oven and enjoy. If you are saving them for the week, let them cool and then wrap in foil or plastic wrap. To re-heat in the morning microwave for about 25-30 seconds.


You do not need to use these exact ingredients, in fact I tend to switch mine up. I use whatever greens and cheese I have on hand. Sometimes I add in some meat. It all depends on my mood. This are quick, easy and satisfying.
