Snack Food
A question I am asked fairly often, “What do you snack on when you are watching TV and lounging around?” My response, “I don’t!” No, No I am just kidding. Of coarse I snack, I’m not a robot. It is impossible for me to lay around at night and watch JT snack and continue to hold onto my willpower. So what do I do? I have a few go to healthy snacks. My top three, wasabi almonds, veggies and hummus and today’s recipe, sweet potato chips. These chips are easy to make but they do take 2 hours to bake. So I recommend making a big batch earlier in the week and separating into individual serving bags.

What do you need:
Sweet potatoes (the number of sweet potatoes varies depending on how many chips you want to make- one large sweet potato makes about two to three servings)
Spray coconut oil (or olive, i am just loving coconut oil right now)
Sea salt prebake
Look above, that ingredient list is amazing. Three things, there are three things on that list. You will start by pre heating the oven to 250. While the oven is heating pull out your mandolin and very thinly slice the sweet potato (about the thickness of a dime) If you do not have a mandolin buy one, (no seriously they are awesome and make food prep so much easier) but if you do not have one right now that’s okay- pull out a knife and very carefully slice the sweet potato as evenly as you can. After you finish slicing, line a baking sheet with foil and lay the sliced sweet potatoes in one flat layer on the pan. Spray lightly with the coconut oil and sprinkle with seat salt. Put the pan in the oven and bake for an hour, flip and bake for another hour. That’s it! If you made enough for the week bag them up and then enjoy. This is a delicious crunchy snack you can munch on guilt free.
